Expect a bold, anise-forward introduction that warms the palate with complex layers of aniseed, lemon myrtle, elderflower, gentian, fennel seed, hyssop, and the legendary wormwood.

Moulin Rooz opens with a robust anise flavour, leading to a warming, prickly mid-palate that gently numbs the lips. Rich notes of liquorice and bitter herbs unfold, finishing dry with a lingering heat and subtle bitterness.

Serving Suggestions

Enjoy this artisan absinthe in the traditional French style for the full sensory experience. Use an absinthe fountain or slowly drip ice-cold water over a sugar cube placed on a slotted spoon resting above your glass. Aim for a water-to-absinthe ratio between 4:1 and 6:1 to best release the complex aromas and flavours.

The replacement

My go to absinthe was always Mansinthe, but with it no longer available I thought I would try this first in the search for a replacement. While I’m not a big fan of the dark green colour, before or after the louche, and I miss the very apparent opalescent colour that Mansinthe had. That said this is still a fine a drop. Definitely worth a try. Delivered quickly without fuss and yes I will be keeping a bottle on the shelf. Cheers!

Thank you for your review! We're delighted to hear you enjoyed our absinthe and plan to keep it stocked. Regarding the louche effect, it happens when water is added to absinthe, causing the oils from the aniseed to create a cloudy appearance.

Delicious! Quite soft - lots of herb tones. Lovely afternoon drink on a sunny day... also probably on a cold rainy day if it lasts that long!

The vapours of this amazing distillat as they are freeing themselves out of the glass after purring the water over sugar, it’s something beautiful and timeless, it’s easy to drift off into a cafe in Paris in 1900, and it prepares for what’s next. It’s a great absinthe full botanical and complex in the mouth. I recommend it fully.
