6 Easter Ice Cream & Liqueur Pairings to Try

From Dark Chocolate & Coffee to Turkish Delight & Rocky Road

Chocolate at Easter is almost compulsory.

But this year, we're putting some of ours on ice cream.

We've matched six Tamborine Mountain Distillery dessert liqueurs with six ice cream flavours, using coffee, orange, mint, liquorice, chilli and rose to play against chocolate, vanilla and rocky road.

They're simple enough to make at home: scoop the ice cream, pour over a little liqueur and finish with the garnish.

Here are six combinations to put on the Easter dessert table.

Easter table with TMD liqueurs

1. Dark Chocolate Liqueur + Coffee Ice Cream

Finish with: Chopped dark chocolate + espresso beans

Coffee and dark chocolate naturally bring out each other's roasted, bittersweet character.

Pour Dark Chocolate Liqueur over coffee ice cream, then add chopped dark chocolate for texture and a few espresso beans for an extra hit of coffee.

Best for: The dark chocolate and coffee person at the table.

2. Choc Mint Liqueur + Mint Chocolate Chip Ice Cream

Finish with: Crushed Mint Slice biscuits + fresh mint

This one doesn't try to contrast flavours — it doubles down on chocolate and mint.

Choc Mint Liqueur adds another layer of mint and chocolate to the ice cream, while crushed Mint Slice biscuits bring the crunch.

Best for: Anyone who always chooses the mint chocolates first.

3. Jaffa Liqueur + Chocolate Ice Cream

4. Licorichoc Liqueur + Vanilla Bean Ice Cream

This is where things get a little more unusual.

Rather than adding Licorichoc to another strongly flavoured ice cream, we've paired it with vanilla bean, giving its liquorice and chocolate character room to stand out.

Dark chocolate chunks and crushed peanuts bring contrasting texture.

Best for: Liquorice fans — or the person looking for something different from the usual Easter chocolate flavours.

5. Choc 'n' Chilli Liqueur + Chocolate Ice Cream

Finish with: Dark chocolate curls + a little chilli

Cold chocolate ice cream followed by the warming chilli character of Choc 'n' Chilli Liqueur makes this pairing all about contrast.

Add dark chocolate curls and, if you genuinely like heat, a very light sprinkle of chilli.

Best for: The chocolate lover who likes a kick at the end.

 

6. Turkish Delight Liqueur + Rocky Road Ice Cream

Finish with: Chopped pistachios + mini marshmallows

This might be the most Easter-like bowl of the six.

The rose character of Turkish Delight Liqueur meets chocolate, nuts and marshmallow in the rocky road, while chopped pistachios add crunch and another flavour traditionally associated with Turkish delight.

A few mini marshmallows on top finish the whole thing off.

Best for: Anyone whose Easter philosophy is more is more.

How Much Liqueur Should You Pour Over Ice Cream?

You don't need much.

Start with a small pour over one or two scoops, taste it, and add more if you want a stronger liqueur flavour.

The idea isn't to drown the ice cream. You still want to taste why the two flavours were paired in the first place.

And because the ice cream is cold, give it a minute before eating. As it begins to soften, the liqueur and melted ice cream start to come together — arguably the best part.
