Inspired by the bohemian era of 19th-century France, this absinthe blends traditional flavours with unique botanicals, delivering an unforgettable tasting experience. Expect a bold, anise-forward entry that warms the palate with complex notes of aniseed, lemon myrtle, elderflower, gentian, fennel seed, hyssop, and the legendary wormwood.

Tasting Profile: A robust anise flavour leads into a warming, prickly mid-palate that numbs the lips and reveals layers of liquorice and bitter herbs. The finish is dry, with a lingering heat and a touch of liquorice bitterness.

Serving Suggestions: Absinthe is best enjoyed diluted in the traditional French style. For an immersive experience, use an absinthe fountain: place a sugar cube on a slotted spoon over a glass of absinthe, then drip ice-cold water over the sugar until dissolved, aiming for a 4:1 to 6:1 water-to-absinthe ratio.

Delicious! Quite soft - lots of herb tones. Lovely afternoon drink on a sunny day... also probably on a cold rainy day if it lasts that long!

The vapours of this amazing distillat as they are freeing themselves out of the glass after purring the water over sugar, it’s something beautiful and timeless, it’s easy to drift off into a cafe in Paris in 1900, and it prepares for what’s next. It’s a great absinthe full botanical and complex in the mouth. I recommend it fully.

Absolutely delicious. I love the distinct Australian flavors and the beautiful floral smells that blossom as I prepare it.
